One serving = 12,5 g
Five minutes, no machine.
Hot (200 ml): one levelled scoop (12.5 g) into a cup. Stir with 40 ml hot water until smooth and espresso-thick. Froth your milk, pour, done.
Iced (250 ml): one rounded scoop (15 g), stirred with 50 ml hot water. Ice and 150 ml milk in a glass; pour the cacao over.
No frother? Milk warmed in a pan works fine. You lose the foam, not the flavour.

What it tastes like
Dark first, real cacao, nearer to a good dark chocolate than to the hot chocolate you grew up with. Then a brightness most chocolate drinks don't have; that's what non-alkalised means in the cup.
Barely sweet. Under 3 g of coconut blossom sugar per serving. There to round the flavour, not to be the flavour.
With milk it turns full and smooth. Dairy or oat, hot in winter, over ice in summer.

YOU MAY HAVE ALREADY TASTED IT
Barista Cacao is poured at Soho House, LOT61 and Saint-Jean in Amsterdam and at counters from Antwerp to Paris to New York. More than 150 in all, most of them here in the Netherlands. If you've had a good cup of cacao lately, there's a fair chance it was ours.
The bag at home makes the same cup. Same blend, same recipe.

SUBTRACTION, CHECKABLE
How it's made
Cacao from smallholder farms in Latin America. Everything else is there to serve it. Honest food, to us, is mostly restraint: the less we do to the bean, the more of it you taste. So we roast low and slow. For flavour, not speed and the rest of the list is what we don't do.
No alkalising
No Dutch processing. It deepens the colour but neutralises the flavour. We keep ours exactly as fermentation made it.
No pesticides
Grown without synthetic pesticides. Part of the blend is already certified organic, and we're working toward certification for all of it.
No refined sugar
Under 3 g of unrefined organic coconut blossom sugar per cup.
No additives
No gums, no flavourings, organic coconut milk powder for texture, organic cinnamon and a pinch of salt for balance. That's the whole list.
No caffeine race
Cacao carries roughly 80% less caffeine than coffee. This cup isn't for pushing on.

GOOD QUESTIONS
The ones that come up most. At counters, in our inbox, and from people making it at home for the first time. Short answers, no hedging.
Is it bitter?
It's dark, not bitter. Closer to a 70% chocolate bar than to black coffee. The milk does the rounding. If you like it sweeter, a spoon of honey works.
Does it work with oat milk?
Yes. It's made to be poured with milk, and oat is what many of the cafés pour. If it froths, it works.
How long does a bag last?
The 250 g bag makes 20 cups. A cup most days for about three weeks. The 125 g bag makes 10.
How fast is shipping?
From Amsterdam with PostNL, usually with you In 1-2 working days in the Netherlands. €2.95, free over €35. Across most of Europe it's €9.95.
What about allergens?
Barista Cacao contains coconut(milk powder and blossom sugar) and mushrooms(chaga, reishi, lion's mane 11% of the blend, included for their earthy flavour). It's plant-based and gluten-free. Full ingredients are listed above; if you're unsure, ask us.
