Barista Cacao Tin

This is the cacao we make for cafés, and the one their guests keep taking home. We roast it light and slow and never alkalise it, so it comes out bright, fruity and fermented. Closer to a bright coffee than to hot chocolate.

The tin comes with a steel scoop. Start with 125 g for 10 cups, or 250 g for 20. When it runs out, keep the tin and refill it.

No allergens in the recipe. It's made in a facility that also handles milk, soy, gluten and nuts, so traces are possible. Every ingredient is plant-based.

How to make it

Stir 1 scoop (12,5 g) into 40 ml hot water until smooth.

Warm

Froth your milk and pour gently over the cacao base.

Iced

Pour over cold milk and ice.

No frother? Milk warmed in a pan works fine. You lose the foam, not the flavour.

What it tastes like

Dark first, proper cacao, closer to dark chocolate than to the hot chocolate you grew up with. Then something brighter, almost fruity, that heavy processing usually takes away.

Barely sweet: 3,2 g of sugar per scoop. There to round the flavour, not to be the flavour.

With milk it turns full and smooth. Dairy or oat, hot in winter, over ice in summer.

How to make it

Five minutes, no machine needed.

Warm

One levelled scoop (12,5 g) into a cup. Stir with 40 ml hot water until smooth and thick, like an espresso. Froth 150 ml milk and pour it over.

Iced

Same start: one scoop, 40 ml hot water, stirred smooth. Fill a glass with ice and 150 ml cold milk, then pour the cacao over.

How it's made

Cacao from smallholder farms in Latin America, grown without synthetic pesticides. We roast it light and slow and never alkalise it, so it keeps what the bean brings: bright, fruity, fermented. When we've sourced a bean this good, it doesn't need much else.

No alkalising

No Dutch processing. It darkens the colour and flattens the flavour. We keep ours the way fermentation made it.

No synthetic pesticides

The farms grow our cacao without them. The coconut blossom sugar and the cinnamon are organic.

No refined sugar

Sweetened only with unrefined coconut blossom sugar. 3,2 g of sugar per scoop.

No additives

No gums, no flavourings, no milk powder. Cacao, coconut blossom sugar, a touch of cinnamon and a pinch of salt. That's the whole list.

Is it bitter?

No. It's bright and a little fruity, closer to a bright coffee than to hot chocolate. The milk rounds it off. If you like it sweeter, a spoon of honey works.

Does it work with oat milk?

Yes. It's made to be poured with milk, and oat is what many of the cafés pour. If it froths, it works.

How long does a tin last?

The 125 g tin makes 10 cups, the 250 g tin 20. A refill bag makes 20 too: at a cup most days, about three weeks.
